> Alpine Brown breed cows. The milk from the evening milking is left to rest for at least 12 hours in large vats at a temperature of 10 to 12 °C, during which a layer of cream forms and floats on top of the milk. After the twelve hours have passed, the cream is removed by hand using a tool called a “spannarola” (cream skimming). It is then placed into the churn (a wooden vessel with a cylindrical or truncated-conical shape) and churned until butter forms. Once the churning process is completed, the butter is washed by hand with cold spring water and kneaded by hand to help the buttermilk drain out. The final step is placing the resulting mass into wooden molds (usually in sizes ranging from 0.5 kg to 1 kg), where the butter takes on the classic block shape, with dimensions that may vary.
